This roasted tomato salsa is a family classic that’s been perfected over 25 years — and for good reason! It’s still the one we reach for every time. The secret? Fire-roasted tomatoes, fresh ingredients, and just the right kick of heat. You can easily adjust the spice level to your liking, mild, medium, or bring-the-heat!

Ingredients

  • Roma tomatoes: ~0.5 lb (about 2–3 small tomatoes)
  • Onion: ~0.5 oz (≈ 15 g, about 1–2 tbsp finely chopped)
  • Cumin: ~1/8 tsp
  • Chipotle pepper (or similar smoky chili): ~½ pepper (or to taste)
  • Cilantro: ~1 tbsp chopped (≈ 4 g)
  • Green chili: ~5–6 g (about 1/3 of a small chili or 1-2 TBS drained diced green chillies)
  • Garlic: 1 small clove (or about 2 g)
  • Salt: ~1/4 to 1/2 tsp (start small and taste)
  • Lemon juice: 1 tsp, or to taste
